Black Bean Salad

When the weather shows signs of warming up I pretty much immediately start craving cold foods and more snack-like meals. I also love entertaining, so anything I can toss together that is simple and quick for a room full of people is my kind of meal! This black bean salad is perfect for all of your summertime needs. I served it with Siete tortilla chips, but you could use this as a topping for burritos, tacos, salads, or use it as a dip like I did!

Black Bean Salad

Serves 6

Ingredients

2 cans black beans

1 cup of frozen corn, cooked 

1 orange bell pepper, diced 

1 pint of cherry tomatoes, halved

1/2 red onion, diced 

2 limes, juiced

1 bunch cilantro, chopped 

1 teaspoon sea salt

Optional: top with diced avocado before serving

Directions

  1. Toss all ingredients into a large mixing bowl.

  2. Season to taste.

  3. Store in the refrigerator or serve immediately.
