Blueberry Banana Breakfast Cake

Well, hello friends! It seems I haven’t posted a recipe since July…oops! I guess you could say I’ve been a tad busy. Opening a restaurant has really changed my life and basically all sense of routine, but I couldn’t love anything more. I suppose our first global pandemic didn’t exactly help. But nevertheless, here I am! I made this recipe back in January after completing my 21-day Community Cleanse Program. It was the perfect “treat” after sticking to the program for 21-days. However, I’m pretty sure you and your families will enjoy this one any time of year!

Blueberry Banana Breakfast Cake

Yields 6 slices

INGREDIENTS

1 cup oats 

1 cup oat flour

1/4 cup coconut sugar 

1/4 cup ground flaxseed 

1/4 cup hemp seeds 

2tsp baking soda

1 TB baking powder

1tsp cinnamon

1 tsp salt 

3/4 cup water 

1/8 cup melted coconut oil 

2tsp vanilla 

3 mashed bananas 

1/2 cup fresh blueberries 

TOPPINGS

1 thinly sliced banana 

1/4 cup fresh blueberries 

Cinnamon for dusting 

DIRECTIONS

  1. Preheat oven to 350

  2. Mix all dry ingredients into a bowl. 

  3. Add all wet ingredients and mix well until thoroughly combined.

  4. Grease a baking pan with coconut oil.

  5. Pour batter into pan.

  6. Top with sliced banana and 1/4 cup additional blueberries. 

  7. Bake for 25 minutes. 

  8. Let cool. 

  9. Cut into 6 slices and serve!
